This diet is based on the principle that the intestinal wall has been damaged and therefore the disaccharide enzymes which reside on the fringes of the intestinal wall have been displaced. Thus, any disaccharide sugar such as sucrose, lactose, or maltose will not be properly digested. Since these sugars are not broken down and absorbed into the body, they ferment and feed intestinal bacteria and yeast which causes further intestinal damage, thus perpetuating the situation. To stop this cycle, the diet is designed to eliminate foods with disaccharide sugars. The removal of these foods allows the gut to heal and eventually the disaccharide enzymes will return. For this diet to work, you must not cheat!!! Give it a couple of months, then evaluate. For best results, follow the diet for a year after all intestinal symptoms have ceased, or for life.
According to the author, Elaine Gottschall, this diet is 85% effective for ulcerative colitis patients, and 95% effective for Crohn's Disease patients (Personal communication by phone, April 6, 2001).

Roasted Peanuts in the shell may be tried cautiously after being on the diet for about six months.

Nuts sold in salted mixtures since most have been roasted with a starch coating. |
